An appetizer of Carpaccio of beef topped with field greens salad dressed with basalmic vinegar, marinated oyster mushrooms and parmesan shavings will follow. His entrée is Poulet Chasseur served on a bed of home-made spaetzle sautéed in butter maître d’hotel. The grand finale is Escoffier’s celebrated dessert Peche Melba, which he invented to honor the legendary Australian soprano Nellie Melba. All of these courses will be paired with wines selected by Chef Jonsson and Wine Country Inn Food and Beverage Manager Jack Ballanger.
